Pou\u017e\u00edv\u00e1 se jak ke chv\u00e1len\u00ed jedine\u010dn\u00fdch chut\u00ed ve \u0161pi\u010dkov\u00fdch restaurac\u00edch <em>a<\/em> ke kritice nep\u0159\u00edjemn\u00fdch z\u00e1\u017eitk\u016f. Tento zmatek vznik\u00e1, proto\u017ee \u201edivok\u00e1\u201c p\u0159\u00edchu\u0165 nen\u00ed jedin\u00e1 p\u0159\u00edchu\u0165, ale souhrnn\u00fd n\u00e1zev pro maso, kter\u00fd neodpov\u00edd\u00e1 typick\u00e9mu profilu modern\u00edch, pr\u016fmyslov\u011b p\u011bstovan\u00fdch produkt\u016f. Pochopen\u00ed tohoto rozd\u00edlu \u2013 a toho, co jej zp\u016fsobuje \u2013 je d\u016fle\u017eit\u00e9 nejen pro chu\u0165, ale tak\u00e9 pro pochopen\u00ed toho, jak se zm\u011bnily na\u0161e potravinov\u00e9 syst\u00e9my. <\/p>\n<h3>Co vlastn\u011b znamen\u00e1 \u201edivok\u00e1\u201c chu\u0165?<\/h3>\n<p>Zpo\u010d\u00e1tku se \u201edivok\u00e1\u201c chu\u0165 naz\u00fdvala maso divok\u00e9 zv\u011b\u0159e, z nich\u017e ka\u017ed\u00e1 m\u011bla sv\u00e9 vlastn\u00ed jedine\u010dn\u00e9 chu\u0165ov\u00e9 nuance. Dnes tento term\u00edn voln\u011b popisuje maso, kter\u00e9 je tu\u017e\u0161\u00ed, \u0161t\u00edhlej\u0161\u00ed a m\u00e1 travnat\u00e9, zemit\u00e9, kovov\u00e9 nebo ostr\u00e9 t\u00f3ny. V podstat\u011b je to cokoli, co se vymyk\u00e1 typick\u00e9mu z\u00e1\u017eitku z k\u0159ehk\u00e9ho masov\u011b vyr\u00e1b\u011bn\u00e9ho hov\u011bz\u00edho, vep\u0159ov\u00e9ho nebo ku\u0159ec\u00edho masa. <\/p>\n<p>Masn\u00ed v\u011bdci zd\u016fraz\u0148uj\u00ed, \u017ee jde o subjektivn\u00ed pojem. Tmav\u0161\u00ed maso obvykle znamen\u00e1 siln\u011bj\u0161\u00ed, n\u011bkdy kovovou chu\u0165. Nen\u00ed to jen o barv\u011b; souvis\u00ed to s t\u00edm, jak zv\u00ed\u0159e \u017eilo. <\/p>\n<p><strong>Pou\u017eit\u00ed sval\u016f tak\u00e9 ovliv\u0148uje texturu:<\/strong> Svaly, kter\u00e9 byly intenzivn\u011b vyu\u017e\u00edv\u00e1ny, jsou tu\u017e\u0161\u00ed, co\u017e ovliv\u0148uje na\u0161e vn\u00edm\u00e1n\u00ed chuti. N\u00e1\u0161 mozek interpretuje tyto vjemy spole\u010dn\u011b, tak\u017ee tvrd\u00fd kus masa <em>c\u00edt\u00ed<\/em> jinak, ne\u017e ho v\u016fbec ochutn\u00e1me. <\/p>\n<h3>Role stravy v chuti<\/h3>\n<p>Zv\u00ed\u0159ata chovan\u00e1 v tov\u00e1rn\u011b a krmen\u00e1 obil\u00edm produkuj\u00ed jemn\u00e9, dob\u0159e mramorovan\u00e9 maso, ale postr\u00e1d\u00e1 bohatou chu\u0165. Prasata se sv\u00fdmi jednoduch\u00fdmi \u017ealudky jsou obzvl\u00e1\u0161t\u011b citliv\u00e1 na stravu. Nakrmte je aromatickou zeleninou a uc\u00edt\u00edte to v chuti vep\u0159ov\u00e9ho masa.
